Classic Rich Dark Chocolate Truffles

Every year I get all caught up in what new ingredient I'm going to add to my ganache to create a new form of truffle--let's face it, they're fabulous with just about any one of a thousand different additions--but it always comes back to the classic.  It's what people always ask for, so how could I not make sure that it goes up first?

The ganache is made of a rich, cocoa-intense dark chocolate and full thick double cream.  Each truffle is hand-formed and then rolled in high quality cocoa.  You can see that I come down on the 'classic truffle look' side of the debate--no perfect balls here.

With each order you'll get 15 well-sized truffles.  They're hard to stay away from, but if you've got self-control, they keep very well in the fridge or even in the freezer for a couple of months.
